1 c. Vegeburger1c. Tofu, crumbled1c. chopped onion1 pkg Soysation Cheddar shreds2 cans Enchilada Sauce8 corn tortilla's 1 T olive oil
Mix Vegeburger, tofu, onion, 1/2 the cheese, and 1 can enchilada sauce. Dip corn tortillas in 1 T hot olive oil to soften. Pat oil off with paper towel. Put above filling into each tortilla. Place in baking dish. pout other can of sauce over top and sprinkle with remaining cheese. Bake at 350 degrees for 30 minutes. Make 8 enchilada's.
