spicy turkey taco crock pot soup

Ingredients
1 lb. ground turkey (browned)1 med. onion chopped1 can pinto beans1 can black beans1 can sweet corn1 can tomatoes & green chilis (rotel)1 can diced chipotle tomatoes1 quart low sodium chicken broth1TBSP ground cumin2TBSP ortega lower sodium taco seasoning1tsp. garlic powder1tsp. ground chili powder1tsp. oregano flakes
Directions
Makes 8 2c. servings

In a crock pot or slow cooker,

1. add browned drained turkey, and diced onion.

2. Drain, rinse and add pinto beans, black beans, sweet corn and rotel tomatoes. DO NOT DRAIN CHIPOTLE TOMATOES.

3. Add the chipotle tomatoes with the liquid in the can.

4. Add the chicken broth.

5. Add all spices and stir well.

Cook on high 3- 4 hours. You could also cook on low for 6-8 hours. It doesn't really matter with this soup!

I add a teaspoon of minced fresh cilantro to my bowl when I eat it. This is spicy. If you don't like too much spice you can omit the chili powder.

Servings are 2 cups each.

You can use frozen corn and pre-cooked dry beans to reduce the sodium if needed.

    Really tasty! We put a spoonful of light sour cream in the soup along with chopped cilantro right before serving it. I couldn't find chiptle tomatoes, so just used fire roasted tomatoes. Thanks for sharing the recipe! - 6/21/10
