Madras Curry Tilapia

Ingredients
2 tbsp madras curry powder2 tbsp canola oil4 tilapia filets (16 oz)
Directions
Brush a non-stick skillet with canola oil. Preheat skillet on medium high. Sprinkle each fillet front and back with curry powder. Cook on each side til fish is white and flaky.

This is a great recipe, because it still gets a bit crispy around the edges, without being too fatty.
