Creamy Mushroom Chicken Revised

Ingredients
1.5 lbs. boneless, skinless chicken breasts, diced2 cups low-sodium chicken broth2 tbsp. olive oil1 yellow onion, diced2 cloves garlic, minced1/2 lb. sliced mushrooms2 small cans Campbell's Healthy Request Cream of Mushroom soup (or Cream of Chicken)3 oz. Neufchatel (low fat) cream cheese4 tbsp. fresh, snipped chives (or 2 tbsp. dried)1/4 cup fresh parsley, chopped (or 2 tbsp. dried)
Directions
In large saucepan, heat broth to boiling and add diced chicken. Simmer for about 20 minutes until chicken is cooked through. Meanwhile, in large, non-stick skillet, heat olive oil and add onions, garlic and mushrooms. Saute until onions are transparent. Pour in chicken with broth; add soup, chives, mushrooms and Neufchatel cream cheese and stir well until cheese is melted and all ingredients are well blended and hot. Serve over rice, noodles or baked potatoes. Makes about 6 servings.
