Tex Mex Chicken Penne

3 chicken breasts, cooked and either diced or shredded12 ounces penne pasta, cooked and drained1 can cream of chicken soup, Healthy Request or reduced fat1 cup light sour cream1 packet taco seasoning, reduced sodium1 (4 oz) can diced green chiles1 cup Mexicorn (corn with peppers, or regular corn, drained1 teaspoon red pepper flakes, optional (for extra heat)1 cup Mexican blend shredded cheese, divided
Preheat oven to 350 degrees. In a bowl combine soup, sour cream, taco seasoning and red pepper flake, stir well. Add green chiles, Mexicorn, chicken, and 1/2 cup cheese, stir to combine. Add pasta and coat well. Pour mixture into 9 x 13 inch baking dish or equivalent. Sprinkle remaining 1/2 cup cheese over top. Cover with foil and bake for 30 minutes. Let sit uncovered 5 minutes before serving. Serves 8.
