Li's Healthy Banana Nut Cookies

Ingredients
2 C. Rolled Oats3 Ripe bananas, mashed1/2 C. raisins1/4 C. semi-sweet chocolate chips1/4 C. Pecans, chopped1/4 C. Splenda1/3 C. Unsweetened apple sauce1 1/2 T. Mexican Vanilla Pinch Cinnamon
Directions
Heat oven to 350. Line baking sheet with parchment paper. No need to grease pan if you don't use parchment.

Mash bananas in a medium bowl. Add remaining ingredients. Mix until moist. Let stand for 15 minutes. Drop cookies onto baking sheet by level tablespoonfuls.

Bake 15-20 minutes until golden brown.

Makes 34 cookies.

    These were good and sweet enough to satisfy. I overcooked them a tad, so I think the trick is to keep them plump, do not flatten them. The ones that were "plumper" had a nice chewy center. I will make these again but with a minor adjustment. Thanks for the recipe. - 10/23/12
