Lemon and Garlic Potato Salad

4 medium red potatoes, peeled, diced, boiled, and cooled1/2 cup chopped parsleyJuice of 2 lemons2 cloves of garlic, finely chopped1 tbsp. olive oilsalt and pepper to taste
1. Combine all but potatoes in a bowl and whisk to combine.
2. Add potatoes and mix well.
3. Chill and serve.

Maybe my lemons were extra big, but I knew right away that if I added the dressing as called for in the recipe it would be way to strong. I only ended up adding about 1/3 and it was fine. While not a 'I can't wait to have this again' recipe, I do see myself making it occasionally. - 9/6/10

Actually the recipe is really good if you add the garlic and i added some rosemary as well.It was amazing.Mince about two cloves of garlic depending on how much you want and mix with the olive oil, salt, pepper, parsley and rosemary before tossing with the potatoes. Then add the lemon last. Great! - 6/28/07
