Ingredients
* Plain white '00' flour 100 g * Semolina, fine ground,, unenriched, 25 grams * Egg, fresh, 1 medium * Egg Yolk, 1 large * Salt, 3 grams approx 10ml water
Directions
In a bowl, mix together the dry ingredients, make a well in the centre, add the egg, egg yolk and water.

Mix together, slowly incorporating the dry into the wet ingrients.

It should come together to form a firm dough, knead for a few minutes until it becomes smooth.

Place into a plastic bag in the fridge until ready to use.
