Ingredients
1.5 cups whole wheat flour1 cup rolled oats1 cup unsweetened applesauce2 tbsp sugar (or splenda sugar blend)2 tbsp brown sugar (or splenda brown sugar blend)2 carrots, grated1.5 cups low fat buttermilk6-10 dried apricots0.33 cup of dried blueberries0.33 cup of dried cranberries0.33 cup of dried raisins (golden or dark) 1 tsp baking powder1 tsp baking soda2 tsp vanilla1 tbsp cinnamon1 tsp nutmeg
Directions
Grate the carrots or place them in a food processor. Put dried fruits in food processor and blend together. Mix all ingredients together.
Scoop mixture into 1/4c servings and place on a baking sheet. Bake at 350-400 for about 15-20 minutes, or until starting to brown. Place on cooling rack to set. Makes 12 large breakfast cookies!

    Sorry about that- I fixed it. Took me a while, sorry about that as well. :) This recipe is a work in progress; I change it up about every time I make it.

    I made these last night and didn't think they were anything like Starbucks' version. They do taste very healthy, and my 4-yr-old actually liked them b/c he doesn't get lots of sugar, but I wouldn't make them again without adding sugar and some oil/butter. - 1/29/09

    Buttermilk, cinnamon and nutmeg are included in the NI, but not in the actual recipe. I think best to try with what's listed for NI first, and adjust from there. - 12/28/08

    Really great recipe - but I misread the ingredients and used 1/2 cup flour instead of 1 1/2 cup. I like the results better with the lower flour amount and it isn't too dry. Tomorrow I'm trying pumpkin puree instead of applesauce. Thanks!! - 11/7/08
