Double Apple Multigrain Muffins

3 3/4 c Wheat Bran1 1/2 c Old Fashion Oats3/4 c whole wheat flour3/4 c all purpose flour6 t baking powder3/4 t baking soda2 1/4 c + 3 T unsweetened applesauce1 1/2 c nonfat milk2/3 c honey5 drops of stevia3 egg whites1 egg yolk1 1/2 c freshly chopped apple1 t cinnamon3/4 t salt1/8 t allspice1/4 t ginger1 t vanilla extract1/4 t orange zest1/4 t lemon zest1/8 t nutmeg3 T ground flaxmeal
Mix dry ingredients in a large mixing bowl.
Mix wet ingredients in another bowl.
Add wet to dry and mix until moistened. Then, fold in chopped apples.
Spray 3 muffin pans with Pam. Scoop a large spoonful of dough into each place in the pan, filling up to 2/3 of the form.
Preheat oven to 400 degrees. Bake for 20 minutes.
