Spanish Brown Rice

Ingredients
.5 T Olive Oil1 Can tomatoes with green chiles(drained)1/4 C Chopped onions1/4 C Chopped Bell Peppers3/4 C Brown Rice1 1/2 C Water1/8 t Chili powder1/4 t. each Cumin, garlic powder and onion powder
Directions
Saute onion and Bell Pepper in olive oil until onions are translucent. Add rice, water, tomatoes and spices. Bring to a boil. Reduce heat to simmer and cover tightly. Simmer for 45 minutes. DO NOT open lid or stir during cooking time. Makes 3 3/4 c. servings.
