Ingredients
2 cups of fat-free chicken broth2 cups of salsa (mild, hot, or medium your choice)2 cups of frozen mixed vegetables( your choice)2 cups of black beans ( drained and rinsed)1 pound of boneless and skinless chicken breasts (cooked and cubed)
Directions
In a large pot, combine the chicken broth, salsa, vegetables and beans. Cook on medium high heat until the mixture begins to boil, stirring occasionally. Reduce the heat ot low, cover and simmer for 5 minutes or until vegetables are tender. Stir in the chicken and simmer for 5 minutes.
