1 lb. fresh spinach (cleaned & dry)Thinly sliced red onion11 oz. can mandarin oranges, drained1/2 cup thinly sliced celeryToasted pine nuts or toasted sliced almonds (about 1/2 cup)

Toss salad ingredients together without dressing; keep in refrigerator until ready to serve.
