Hominy Scrambled Eggs

Ingredients
hominy, 1 can4 eggs1/4 cup milk2 Tbs oil4 scallions, chopped1 chipotle pepper, chopped1 dash salt1 slice good cheddar cheese.
Directions
Fry hominy until broken up and warmed through. Add milk, cook until the milk is taken up by the hominy. Add 1 chipotle pepper, chopped fine. Add scrambled eggs and cook on low temperature until done through. Add cheese slice, broken up into small pieces, and scallions. Add Makes four 1.5-cup servings. Serve with 1 Tbsp. low-fat sour cream.
