White Cheddar Corn Chowder

Ingredients
2 T. olive oil1 c. onion, chopped1/2 c. celery, chopped1/2 t. coriander1/4 t. cumin1/2c. white wine2 c. potatoes, chopped2c. low sodium chicken stock1c. milk3 c. fresh corn kernels1 1/4t. saltpepper to taste2 oz. white cheddar cheese, grated
Directions
Heat oil in dutch oven over medium heat. Add onions and saute until soft. Add celery and cook tender. Add coriander and cumin. Raise heat to medium high and add wine. Deglaze pan and cook until most of liquid has evaporated. Add potatoes, stock and milk. Bring to a boil. Reduce heat and simmer about 15 minutes, until potatoes are tender. Add corn and cook about 4 minutes. Remove from heat. Puree or blend about half of soup. Return puree to pan and stir. Season with salt and pepper. Garnish with cheese. Makes 6 servings.
