brown rice with almonds and apricots

Ingredients
4 c veggie broth (I use Trader Joe's low sodium)2 c brown rice1/3 red onion, chopped1/2 c sliced almonds. toasted60 g dried apricots, thinly slicedbunch of garlic chives, cut
Directions
combine broth and rice. bring to soft boil, reduce heat to low, cover, cook about 50 minutes. add rest of ingredients, fluff and stir. return cover. take off heat. sit 10 minutes

I didn't add salt and pepper, but you can. you can also add garam masala!

    Tastes great and comes together fast. I made it with white rice and chicken bouillon instead of veggie broth. Didn't put it the garlic chives and still tasted fine. Apricots give it a neat taste! - 11/18/10
