Rhea's Baked Chicken w/Sun-Dried Tomato & Asparagus

Ingredients
1 whole Chicken Breast w/bone, no skin8 oz jar of Sun-dried tomatoes in olive oilFresh Blanched asparagusGarlic-mincedGrated Parmesan cheese, salt and pepper
Directions
Put cleaned skinless chicken breast into a baking dish

Blanch Asparagus first, add to baking dish
Add sun-dried tomatoes, Add garlic
Add veggies over the top of chicken
*ADD MORE VEGGIES IF DESIRED

Cover with foil
Bake at 350 degrees for 40 min or til done

Parmesan, salt and pepper to taste

Serving for 2

    I don't think it really matters if you cook with a skinless, boneless breast... I am right now and I have in the past with a recipe very similar to this. - 3/7/11

    I tried this tonight. Instead of sundried tomatoes in oil, I just put in julienned ones and I added onions, a little broccoli, and used the a lot of garlic and boneless chicken breast. It was excellent. - 1/12/11

    this was great - super simple and really tasty! the chicken came out incredibly tender and juicy. we had ours with a salad on the side, but might try it over some whole wheat pasta next time. definitely a new one on our "favorites" list! - 4/21/10
