Rhea's Fat-Reduced Asparagus Soup

Ingredients
1 lb. Asparagus (cut on bias)1 Lg. Carrot sliced thin 1/2 Onion diced1/2 Stick Lite Margarine2 Tbs Flour 6 cups Chicken Stock1/4 cup Fat Free HALF & HALF3 Tbs IMO (sour cream substitute)salt and pepper to taste
Directions
Saute Margarine in pan
Add sliced Carrots & Diced Onion cook until tender
Add sliced Asparagus, cook until tender
add S & P to taste

Sprinkle flour over veggies

Add Fat Free Chicken stock
Stir in Fat Free HALF & HALF, until thickened
Stir in IMO at the end of cooking process.

Serve Chunky or
Puree in food processor until smooth and creamy.
Serve with a warm 3 carb Wheat Tortilla.
