sweet potato/carrot/red lentil thoup

Ingredients
2 tbsp olive oil2 cloves garlici medium chopped onion2 tsp curry powder1 tsp cumin powder2 ribs diced celery.5 cup sliced leeks5 medium chopped carrots3 medium chopped sweet potatoes1.5 cup red lentils5 cups organic chicken broth3 cups filtered waterblack pepper to taste
Directions
make 10 servings. heat gently-crushed garlic in oil until just golden. add chopped onion + curry + cumin. remove browned garlic. add celery + leeks. saute. (may need to add splash of chicken broth to deglaze.) add carrots + sweet potatoes + lentils. add broth + water. bring to boil. lower to simmer for 45 minutes. add black pepper + puree.
