Jenn's Spicy Chicken Cheater Stir Fry

2 boneless skinless chicken breasts, seasoned and grilled - cut into strips or bite size cubes1 bag VIP Mandarin Stir Fry1 bag PICTSWEET All Natural Sliced Yellow Squash1 can La Choy Sliced Water Chestnuts1 c. sliced fresh mushrooms (optional but included in calorie count - we love mushrooms!)1/4 c. low sodium soy sauceCrushed Red Pepper to taste
Trim fat and season chicken breasts. Grill and then cut into cubes or strips.
Spray your largest pan or wok with cooking spray and heat on medium. Pour in all the veggies and cover (you don't need any oil or butter, the veggies make enough naturally!). Allow to cook, stirring occasionally, for 5 minutes. Add in cubed chicken and soy sauce. Stir well, cover and turn to med/low for 5 minutes. Add in crushed red pepper to taste. Cook uncovered last 5 minutes and serve hot. Enjoy!
