Microwave Apple Baked Oatmeal

1/2 c. butter1/2 c. white sugar2 eggs4 c. oatmeal (rolled oats)1 tsp. baking powder1/4 c. brown sugar (not packed!)1 tsp. cinnamon1 tsp. vanilla1 c. milk1 chopped apple (we prefer fuji or granny smith)
In a large pyrex type casserole dish, place the butter and melt in microwave (about 1 minute on high should do it).
Whisk in the white sugar, and eggs. Add oatmeal, baking powder, brown sugar, cinnamon and vanilla. Stir gently.
Add milk and chopped apples and stir until well blended.
Microwave on high for 10 minutes or until set. Let cool slightly before trying to remove from microwave. It will be very hot.
You can serve with milk on top as well.
