Roasted Eggplant Veg Mix

Ingredients
2 cups Eggplant2 cups butternut squash2 cups brussell sprouts2 cups green beans1 small sweet potatoe1.5 cups parsnips2 tbs Olive oil1 tsp oregano2 tsp basil1/4 tsp tymepam spray
Directions
Cut all vegs into small chucks. Add oregano, basil, tyme and olive oil. Coat vegs. Spray cookie sheets with pam. Add vegs.
Spray with pam.
Cook for 35 minutes at 375*
