Lemon Greek Chicken

Ingredients
*Lemon Juice, .25 cup Olive Oil, 2 tbsp Garlic, 2 tsp Oregano, ground, 1 tbsp ( Potato 2 potato (2-1/3" x 4-3/4") *Peppers, sweet, red, fresh, 1 medium (approx 2-3/4" long, 2-1/2"Onions, raw, 1 medium (2-1/2" dia) Mushrooms, fresh, 1 cup, pieces or slices Chicken Breast, no skin, 12 ounces
Directions
cut up vegetables and place in bottom of stoneware casserole
mix olive oil, lemon juice, garlic, oregano and salt & pepper
pour half over vegetables
place chicken on top and brush with remaining lemon-oil mix
bake at 400 for 45 minutes
