Egg-Free Banana Muffins

Ingredients
1 c. mashed bananas (approx. 2)2 c. unbleached all-purpose flour3 Tbs vegetable oil1 c. sugar (I use natural unbleached cane sugar)1 Tbs baking powder1 1/2 tsp baking soda1/2 c. apple juice1 tsp vanilla extract1/2 tsp salt (my addition)
Directions
Preheat oven to 350 degrees. lightly butter 12 muffin cup pan. In a large bowl, with a wooden spoon, combine mashed bananas, flour, oil, sugar, baking powder, baking soda, apple juice, vanilla, & nuts; stir vigorously until completely blended.
Spoon batter into prepared muffin cups, filling 3/4 full, and bake for 15-20 min.

    I too liked this recipe. I made a different egg-free recipe the other day and it was horrible. I still had brown bananas and decided to try again. I made mine similar to JMALASPINA, with Enjoy Life chocolate chips and made it into a bread instead of muffins. I will use this recipe again. - 2/8/12
