Stir-fried beef with mixed vegetables

Ingredients
2 tbsp sunflower oil320g/11oz onions, sliced320g/11oz deseeded butternut squash, sliced320g/11oz sugar snap peas4 tbsp soy sauce4 tbsp caster sugar1 red chilli, deseeded and chopped2 tsp grated fresh root ginger1 tbsp Thai fish sauce1 tsp five spice powder1 tbsp oyster sauce450g/1lb fillet steak, thinly sliced320g/11oz pak choi, halved or quartered if largeHandful of basil leaves, torn

Serves 4.
Chop the onions, butternut squash, pak choi and chilli, grate the root ginger, and shred the basil leaves.
Heat the oil in a wok, then stir-fry the onions and squash for 2 minutes. Reduce the heat and cook gently for 3 minutes. Add the sugar snap peas and cook for 3 minutes until just tender. Meanwhile, heat the soy sauce, sugar, chilli, fish sauce, 5-Spice powder and oyster sauce in another wok or a large frying pan, stirring, for about 3 minutes. Add the beef and cook for about 3 minutes. Add the stir-fried vegetables and pak choi and cook for 1 minute until the pak choi is just tender. Add the basil and serve immediately.
