Tomato & Basil Soup #2

25 - 30 vine ripened med - large tomatoes2 whole punnits of fresh basilsalt and peppera little olive oil (optional)
1. Separate the basil leaves form the stalks and set the leaves asside for garnish
2. Quarter the tomatoes and put into a pan over a meduim heat with a little olive oil if you desire
3. Chop the basil stalks and add to the tomatoes
4. Stir the tomatoes and reduce to a pulp then the Blitz with a hand held blender and pass through a seive to remove the seeds and skin
5. Roughly chop the basil leaves and add to the soup and season with salt and pepper
