Apple Spice Bran muffins, low fat

1 1/2 C. Wheat bran, crude1/2 C. Whole Wheat Flour3/4 C.Flour, white2 TB Brown Sugar1 tsp. Baking Soda,1 1/2 tsp. Baking Powder,3/4 Tsp. Salt,1/2 C. Egg substitute, liquid 1/2 cup low-fat plain yogurt1 small or 1/2 c. grated apple 2 tsp grated orange peel 1/2 C. applesauce, unsweetened1 1/2 tsp. Cinnamon, ground,1/8 tsp. Cloves, ground1/4 tsp. Nutmeg, ground1/2 c. chopped walnuts (optional)1/2 c. raisins (optional)
Preheat to 350 degrees F.
Mix flours, bran, salt, sugar, spices, baking powder and baking soda together.
Add applesauce , apples, orange peel , yogurt and egg beaters. Mix well.
Fold in nuts and raisins.
Pour into cupcake pans sprayed with non-stick spray (and liners if desired) until each is about 1/2 - 3/4 full.
Bake about 15 - 20 minutes until a toothpick inserted into center comes out clean.
Serve with honey or low fat butter or both.
