1/2 Boneless/Skinless Chicken Breast1/3 Cup Rice1oz Shredded Cheddar2tsp Barbecue Sauce
I keep grilled chicken breasts and cooked rice in the fridge all the time for quick meals. If you don't have them prepared ahead of time, plan accordingly for cooking time.
Take 1/3 cup of cooked rice (I prefer brown rice) and spread evenly in the bottom of a microwave-safe bowl. Heat the rice for approximately 1 minute, to warm it up.
Once rice is warmed up, mix 2tsp barbecue sauce into the rice.
Cut the chicken breast into bite-sized pieces and spread them evenly over the rice.
Sprinkle the shredded cheese over the top of the chicken and rice and microwave for approximately 2 minutes.
Enjoy!
