Beef with Noodles

1.3 lbs. super trim stew meat2 pkg. beef boullion1 pkg. Lipton onion soup mix8 oz. uncooked whole wheatbegg noodles4 cups watersalt and pepper to tast
In a 3.5 qt pot, heat nonstick cooking sprayl. Add stew meat. Stir until all meat is browned. Add mushrooms, beef broth and soup mix with 2 cups water, and bring to a boil.
Reduce heat and simmer about 15 -20 minutes.
When meat is tender, add 2 cups water.
Increase heat to high and bring to a boil. Add egg noodles. Boil for 10 minutes, stirring occasionally to make sure all noodles get cooked.
After 10 minutes, add peas and carrots. When heated through, remove from heat, cover and let stand for 15 minutes to let noodles absorb more juice.
