Pomegranate Lemon Muffins

Ingredients
Egg, large, 2Stevia powder, 1 1/2 tsp*Milk, 1%, 3/4 cupfresh Lemon Juice, 1/4 cupLemon Rind, grated, 1-2 tspAll-purpose flour, 3/4 cupWhole wheat flour, 1/2 cupBaking Soda, 1 tsp.Nutmeg, 1/2 tspGround ginger, 1/2 tspPomegranate Seeds, 3/4-1 cup***Can be substituted with 1/2 cup of sugar.**Can be substituted with blueberries.
Directions
Makes 12 muffins.

Preheat oven to 350 degrees F. Beat eggs, stevia, milk, lemon juice and rind together.

Mix together flour, baking soda, nutmeg, ginger in separate bowl. Fold liquid mixture into dry. Fold pomegranate seeds in batter Pour into greased tin. Bake until lightly browned, about 20-25 minutes.
