South Beach Vegetable Quiche Cups

1package (10 oz) frozen spinach3/4 c. liquid egg substitute3/4 c. shredded reduced-fat cheese1/4c. diced bell pepper1/4c diced onion3 drops Hot pepper sauce
Microwace spinace for 2 1/2 min. on high. Drain the excess liquid.
Line a 12 cup muffin pan with foil backing cups. Spray the cups with cooking spray.
Combine the egg substitute, cheese, peppers,onions and spinach in a bowl. Mix well. Divide evenly among muffin cups. Bake at 350 for 20 minutes , until a knife inserted in the center comes out clean.
Quiche cups can be frozen and rehearted in the microwave. Any combinationn of appropriate vevetables and reduced fat cheese may be used. Good served with salsa.
