Peanut Butter & Banana Muffins

1/2 cup Splenda sugar mix1/2 cup natural peanut butter1/2 cup cauliflower puree1/2 cup banana puree (or 2 ripe bananas)1 large egg white1 cup whole wheat flour1 tsp baking powder1 tsp baking soda1/2 tsp salt1/4 cup brown sugar
Preheat oven to 350
2. In a large mixing bowl, mix splenda/.sugar blend with peanut butter, cauliflower puree, bananas and egg white.
3. put the flour, baking powder, baking soda, and salt in a bowl. Add to the bowl with peanut butter mixture and stir just to combine. Add 1/4 cup brown sugar with wooden spoon, stirring just once or twice.
4. Divide the batter amone the muffin cups and bake until the muffins are lightly browned and a toothpick comes out clean when inserted into the center, 15-20 minutes. Turn the muffins onto a rack to cool.
Makes 12 servings of 1 muffin per serving
