3 cups zucchini2 cups yellow squash1 cup red bell pepper1 cup red onion2 tbsp. olive oil
preheat oven to 350 degrees. Chop vegetables into large chunks and place into large mixing bowl. Add 2 tbsp. olive oil to veggies and mix until coated with oil. Put mixture into 11x7 glass baking dish, cover with foil, and bake for 45-60 minutes depending on how cooked you want the veggies to be. Serve as a side dish, great with anything grilled.
