Unstuffed Green Pepper Casserole

Ingredients
1 lb lean ground beef, cooked and drained2 cups cooked rice3 cups tomato sauce 1 diced green or red pepper1 diced small onion1 can diced tomatoes1/8 tsp pepper2 tsp garlic powder1 cup shredded cheddar or colby cheese, low fat
Directions
In a large skillet, sautee green pepper and onion to soften. Add tomato sauce, diced tomatoes, and spices. Cook until slightly bubbling. In a large casserole dish, mix together rice, beef, and tomato mixture. Bake at 350 degrees for 20 minutes. Stir in cheddar cheese and bake an additional 10 minutes.

    This recipe was delicious. I did use cheese but next time I will add it about the last 20 minutes of baking. The cheese browned to much for my taste but overall, good recipe! - 7/19/08
