Ramen Slaw

1 medium head of cabbage1 cup shredded carrots1 package of Ramen Noodles - chicken flavor1 cup sliced almonds2 tbsp extra-virgin olive oil3 tbsp rice vinegar6 tsp splenda
Preheat oven to 350. Place almonds on cookie sheet in a single layer and toast for 10 minutes.
Chop cabbage and mix in large bowl with carrots. Open Ramen noodles and set season packet to the side. Crush noodles in cabbage mix. In a small bowl mix Olive Oil, Rice Vinegar, Splenda and the seasoning packet from the Ramen Noodles. Mix almonds in with cabbage and then pour oil mixture over and mix well.
