madras curry vegetables

Ingredients
1 tsp olive oil1 small chopped onion1 cup water1 cube vegetable or chicken boullion2 small white potatoes8 oz fresh carrots8 oz frozen peas1 - 15 oz can garbanzo beans drained1/4 cup yougurt1 - 12 oz jar seeds of change madras simer sauce1/2 tsp cayenne pepper
Directions
Saute onions in olive oil. Add potatoes, carrots, boullion and water Cook covered until potatoes and carrots are tender. Add Simmer Sauce and cayenne pepper . Add peas, yogurt and garbanzo beans. Cook until heated through. Can be served over brown rice (not included in nutritional information.) Serve with Naan and tzatziki sauce.
3-4 servings dpending on if served with rice.
