Tomato Basil Soup

Ingredients
6 cloves garlic, minced200 g onion, chopped1 1/2 tbsp extra virgin olive oil3 400g cans diced tomatoes2 cups basil leaves, chopped1/4 cup lemon juice150 ml full cream milk (optional)salt & pepper to taste
Directions
1. Add olive oil and garlic to a pot and turn to medium low heat. Add onion once the oil begins to get hot and sweat until translucent.

2. Add tomatoes, an equal amount of water , half the basil, half the lemon juice, a good pinch of salt and black pepper. Bring to boil, reduce to simmer and let cook uncovered for 45 - 60 minutes, or until it reaches desired consistency.

3. Add remainder of basil and lemon juice to taste, and adjust seasonings. If desired, use the back of a spoon to crush large pieces for a more uniform texture. Let cook 5 minutes longer, then remove from heat and stir in the cream, if desired.

Serve with good bread.
