oil free Caramelized onions

Ingredients
cooking spray (olive oil works best)3 cups finely diced onions
Directions
Spray large, heavy-bottomed frying pan or dutch oven.
add onions and set temperature at _very_ low. (For some gas stoves, you may have to use a heat diffuser.)
Check every 15 minutes or so, turning the bottom to the top.
Once onions are obviously turning color (light tan) stir and turn.
When onions are browned stir more often.
These can be left pale brown for use with most recipes, or darkened for hamburgers and low-fat French onion soup.
Makes three equal servings. (The size will depend on how cooked they are.)
Depending on the size of your pan and your patience, this recipe can be doubled or tripled.

    Adding a little salt near the beginning helps draw out some of the moisuture and shorten the cooking time. - 1/17/11
