Sweet Potatoes with Kale

Ingredients
1 shallot1 large Yam or 2 five inch Sweet Potato6 cloves of garlic4 tsp EVOO3 cups of Kale
Directions
Chop shallots and garlic in EVOO using a chopper or blender so that it is almost smooth.
Remove skin from Yam/Sweet Potato and chop into cubes.
Heat EVOO mixture
Add potatoes and cook on low, covered, until potatoes are almost done. Add a little water to help steam them.
Add Kale and cook until it is BRIGHT GREEN. Be careful not to overcook the potatoes.

Serve with pork tenderloin.

    Okay so I feel pretty dumb because getting ready to make this I thought I would have to go to the market to buy an ingrediant I had missed before. Also I had never heard of the ingrediant. Maybe a special sort of diet thing... EVOO! lol - 8/24/10
