Whole Wheat Couscous Salad

Ingredients
1 cup whole wheat couscous1/2 cup golden raisins or thinkly sliced apricots1/2 tsp cinnamon1/4 tsp each ground allspice & turmeric1 cup anned chickpeas, drained1/2 cup finely choppsed sweet red pepper1/2 cup chopped green onions1/2 cup choppsed pistachios or almonds (optional)1/4 cup red wine vinegar2 tbsp chopped fresh mint or 1 tsp driedsalt and pepper
Directions
Combine couscous, raisins, cinnamon, all spice, and turmeric. Pour in 2 cups of boiling water. Cover and let stand until absorbed, about 5 minutes. Fluff with fork. Let cool. Add remaining ingredients. Toss with fork to combine. serves 6
