ScrimptuOus Shrimp Scampi Over Linguini!

1/2 stick unsalted butter2c (32tbs) Extra Virgin Olive Oil2 heads of garlic1 tsp black pepper8tbsp fresh parsley chopped and cleaned5 lemons for lemon juice1 tbs lemon zest2 lemons for lemon wedges15-25 medium shrimp cleaned and tail-less1lb linguiniparmesan or ramano cheese
Linguini:
Bring a pot of water to a boil and add linguini. Cook pasta for 12 mins. Drain.
Sauce:
add butter and EVOO in a pan. mix butter with EVOO until melted. Put garlic in food processor and chop small. Add garlic to oil and butter. Fry garlic on medium for 5 mins. Add black pepper, red pepper if desired, and fresh chopped parsley. Cook on medium heat for 5 mins. Bring sauce to a rapid boil. Keep an eye on the garlic to be sure it does not burn, golden garlic is perfect. Add cleaned and tail-less shrimp to sauce. Cook shrimp until light pink. After shrimp is pink, turn heat off. Add Lemon zest and lemon juice.
In large pot, mix sauce, shrimp and linguini. Serve with grated parmesan or ramano cheese and a nice italian bread! Add lemon wedges for garnish!
