Tasty Beef Strips for Two

Ingredients
2 4oz Serloin steaks, trimmed of fat & cut into stripsGarlic powder to tasteSalt & pepper to taste (optional)1 red bell pepper cut into strips1 10oz can diced tomatoes and greenchilis with juice1 cup beef broth1/2 cup frozen corn
Directions
1. Season beef with garlic powder, salt & pepper (if using). In a large non stick skillet (on medium heat) coated with non stick cooking spray, brown beef with red bell peppers for about 5 mins.

2. Add the tomatoes, beef broth and corn. Bring to a boil then reduce heat and continue cooking for 5 - 7 mins.

Serve over rice or pasta, enjoy!
