Quinoa & Black Beans (From Allrecipes.com)

Ingredients
Cooking Spray1 onion, chopped3 cloves garlic, peeled & chopped3/4 C uncooked quinoa1 1/2 C broth (chicken in nutrition info)1 tsp ground cumin1/4 tsp cayenne peppersalt & pepper to taste1 C corn kernals2 (15 oz.) cans black beans, rinsed & drained1/2 cup chopped fresh cilantro
Directions
Spray medium saucepan with cooking spray, and heat on medium. Stir in onion and garlic until they begin to sweat.

Mix quinoa into the saucepan and cover with broth. Season with cumin, cayenne pepper, salt & pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer for 20 minutes.

Stir in the corn, black beans and cilantro.
