Peach Dream Cobbler

Ingredients
2 cups fresh or frozen sliced peaches3/4 cup Splenda , dividedEgg substitute to equal to 1 egg, I used 2 egg whites1 tablespoon light margarine, softened1 talblespoon fat free milk1/2 cup all purpose flour1/8 tsp. salt1 teaspoon baking powder
Directions
Combine peaches and 1/4 cup splenda in saucepan. Let stand for five minutes. Bring to boil. Reduce heat; cook and stir for 1 minute. Set aside.
In mixing bowl, beat egg substitue, margarine anf remaining splenda until fluffy. Stir in milk. Combine flour,baking powder and salt: add to egg mixture just until combined. Pour into an 8in. square baking pan coated with nonstick cooking spray. Top with peach mixture. Bake at 350 degrees for 35-40 minutes or until lightly browned. Serve warm or cold.
Yield: 9 servings
I added a small amount of cinnamon to the flour mixture.
The orginal recipe called for sugar but I made the substitute of Splenda and it turned out great and lowered the calorie value. 57 cal. per serving.

    The reason this recipe is so low on all counts is because it is only looking at the 1.98 cups of peaches. She missed putting in all the other ingredients so it can't calculate it correctly. It actually sounds good - wish you correct it and resubmit it for us. - 9/1/12

    Ate this all through peach season. Used a real egg since no one has a cholesterol problem. Also substituted applesauce for margarine. Worked out well. It's great served with low fat yogurt ice-cream. - 11/27/08

    I made this and substituted the splenda with Splenda brown sugar blend. it added an awesome flavor to it. Kids enjoyed and great dessert after a grilled dinner alll the guest enjoyed didnt even know they were eating healthy - 7/25/08

    I made mine with real sugar and a real egg and whole wheat flour. It was incredible and a 1/4 loaf was still only 260 calories. I will try it with brown sugar next time. - 6/10/10

    sorry but i didnt really understand the egg thing...did you use egg subsitute AND 2 eggs whites??...or did you use 2 egg whites insteaad of the substitue? - 4/5/10
