2 cups ground almonds or almond flour4 egg substitutes (or egg whites)1/2 cup water (add more, as needed)1/4 cup oil1/2 teaspoon salt2 teaspoons sugar2 teaspoons baking powder1 teaspoon vanilla
Combine ingredients in a blender. (Substitute whole eggs for a richer, higher-calorie pancake - see "Silver Dollar Almond Pancakes #2" for nutritional information.) Thin as needed with water to get a good pouring consistency. Cook on medium heat - a silver dollar cooking pan works very well. Makes about 21 three inch pancakes.
