Black-Eyed Pea/Kidney Bean/Cabbage Soup

3 Tbsp Olive oil1 large Onion2 Ribs Celery4 clove GarlicBlack pepper1/2 # Savoy cabbage14oz Diced tomatoes1cup dried Black-eyed peas2 quart Water15oz Kidney beans1/2cup Basil1/4cup Parmegiano-Reggiano CheeseParsley, Bay Leaf, Thyme
Heat olive oil, add onion, celery, garlic, pepper and saute 10 min. Add cabbage, cook untl wilted, 1 min. Add tomatoes, cook 5 min. Add peas, water, bring to boil. Place parsley, bay leaf, thyme in tea diffuser and add to pot. Simmer about 45 min. Add kidney beans, cook 10 min. Add basil and cheese.
