Bruschetta Chicken

Ingredients
Clean and rinse the chicken breasts. Pat them dry. Marinate them in the sun-dried tomato vinaigrette for at least 1 hour.Mix together the chopped tomatoes, basil and garlic. Sprinkle with salt and pepper and taste.Heat the oven to 375o. Saute the chicken in a large pan over medium heat. Turning once, until lightly brown. Place the chicken on a non stick sprayed foil covered sheet pan.Place 1/4 of the bruschetta mix on each of the chicken breasts. Cover 1 slice of mozzarella cheese and place them in the oven.Bake the chicken for 10-12 minutes or until the chicken is cooked and the cheese is melted.Note: The 20 onces of chicken breast is about 4 chicken breast.
