Easy Satay Chicken

1kg skinless chicken breast, cut into bite size pieces225g peanut butter25g curry powder (Keens is best)1Tbsp vegetable oilWater
1. Heat the vegetable oil in a frying pan.
2. Add the chicken and fry until cooked through.
3. Add the onion and stir until about half cooked.
4. Add the peanut butter.
5. Stir until the peanut butter begins to melt, then stir in enough water to make a sauce.
6. Add curry and stir through.
7. Stir in more water if needed. It should be smooth and saucy, but not runny.
8. Serve on Jasmine Rice.
