Spinach Souffle, low carb

1 ten ounce bag of fresh spinach3/4 cup egg whites2 ounces cream cheese1/4 cup low fat cottage cheese.1/2 tsp salt1/4 tsp ground thymedash of pepper
Allow the cream cheese and the cottage cheese to come to room temperature.
Preheat the oven to 350ºF.
Steam the spinach until just wilted. Place in a collander and allow to drain. Press any remaining moisture through the colander and then roughly chop.
Beat the cheeses together until creamy. Add the salt, pepper and thyme and mix in. Add the chopped spinach and mix in.
Beat the egg whites until thick and beginning to hold their shape. Fold into the spinach mixture, combing gently but thoroughly.
Bake at 350ºF until slightly firm when pressed in the center.
Make 3 servings.
