Low Cal Quiche

Ingredients
2 cups egg substitute1 cup skim milk2 tbs fat free half and half4 slices of turkey bacon1 cup of fresh spinach, chopped3-4 scallions, finely chopped1/2 mushrooms, 1 small can pieces1/8 cup Romano cheese1/4 cup italian style bread crumbsgarlic, salt and pepper to taste
Directions
Spritz a 7x11 pan with nonstick spray and sprinkle the bread crumbs evenly over the bottom of the pan. Chop all veggies and the turkey bacon in to small pieces and set aside. Next, whisk together the egg substitute, milk and half and half. Combine the veggies and turkey bacon with the egg mixture, pour mixture onto the bread crumbs that are in the 7x11 pan and bake for 30-45 min until done in the center and just a touch browned. Let cook before serving as it will fall a little bit. Cut into quarters and enjoy! Serves 4 as a main dish and 6 as a side.
